They also announced they are working on as many as 500 other food products. In their work, they have researched thousands of plants to learn about their properties and how they can used in food production. Their greatest breakthrough came in the form of a pea protein they were able to successfully use to create an egg substitute that could be used to create mayo, dressings, and a host of baked goods.
